Lemon Butter Shrimp & Pasta

Hey y’all! Today I’m sharing a delicious recipe my hubby and I like to prepare, it’s fairly quick and easy and doesn’t require a ton of ingredients and, did I mention it’s delicious!

The cast of characters for today’s dish: Pasta of choice, Shrimp, lemon, butter, garlic, EVOO, heavy cream, salt & pepper, and Italian dressing seasoning (I prefer to use my own homemade version, but any will work).

You’ll want to start by washing those kits, that’s so important ☺️

I like to start this dish by getting my oven preheating to 350 and getting that pasta into some water on the stove. You’ll want to prepare the pasta to al dente, drain, rinse, and set aside. While that pasta is cooking, let’s prepare the shrimp!

Line your cookie sheet with foil and melt 1 stick of butter and pour onto the foil. Thinly slice 2-3 lemons and lay them into a single layer on the buttered pan. Next add a layer of your peeled & deveined Shrimp (I like to leave the tails on for a better presentation, but it’s not necessary). Once the shrimp are in place, sprinkle generously with your Italian Dressing Mix or seasoning (I will add my recipe here).

Now pop that pan in the preheated over and bake for 15 minutes.

While the shrimp are baking we can prepare the lemon butter sauce. Does that not sound absolutely delicious? Makes my mouth water to think about it! Ok! Here we go! Place your EVOO & Butter in a large sauté pan on med heat and cook until your butter gets foamy. Remove from heat for a minute and add your garlic. Return to low heat and sauté one minute, be careful not to burn your garlic. Add your lemon juice, salt and pepper and cook 1-2 minutes. If you have a spice lover in the house, adding some red pepper flakes right about now gives this dish a little kick! Remove from heat and add your pasta to the pan, stir to coat well, now add your heavy cream and parsley and return to low heat for a minute or so. Remove from heat and dish it up! During this process your shrimp will have completed baking and if you love carbs, some garlic bread popped into the oven should be about done as well!

I like to use a large spatula to place the shrimp on top of the pasta, that way I can get lemon, the butter and shrimp all together and not disturb their beauty! Throw in a glass of wine and some candles and your significant other is going to think you deserve your own cooking show on the Food Network!
