GOULASH

On cool, rainy days do you ever just wish for something hot and filling to warm your tummy up? I certainly do! This week has been unseasonably cool, so I decided I would make a big pan of Goulash.

I’ve been making this dish since my kids were little. They always called it, “Momma’s homemade hamburger helper” but it was Goulash. During their childhood, my husband and I were busy trying to make ends meet. I was working 40 hours a week nursing and he was working a full time job and managing a side hustle that we would eventually turn into our livelihood. So, at that early time in our life, we had to make ends meet, and we had to make the meals spread to cover a family of six. I got pretty good at looking in the pantry and making what I could with what was on hand. This recipe is the result of one of those pantry trips. Back in that time, there was no Pinterest board, and no cell phones with internet, so we had to improvise and come up with answers for ourselves. Here is one of my answers:

"GOULASH"

 

From the kitchen of Tammy Kate

Ingredients

– 1 box elbow macaroni

– 1 onion, diced

– 1 pound ground beef, browned

– Season Salt to taste

– Garlic powder

– Salt/Pepper to taste

– 1 can tomato sauce

– 1 can tomato soup

– 1 can diced tomatoes, drained

– shredded cheddar cheese (optional)

 

Directions

1.     cook macaroni to al dente & drain

2.     dice onion

3.     brown ground beef & onion together

4.     In large skillet or soup pot, combine all ingredients and spices bring to a simmer and allow to cook for 20 to 30 minutes.

5.     Serve hot, topped with cheese if you like and with a side of garlic bread.

6.     It’s that easy, eat up and enjoy!
