Schoolhouse Rolls
These babies are a holiday necessity! Everyone loves a good old yeast roll, all warm and buttery! I’ve shared this recipe several times on my social media you can find that HERE, there’s always something going on over on the Instagram. So, here ya go! My favorite rolls:
SCHOOLHOUSE ROLLS
Ingredients
-2 cups warm water (105-110 F)-2 packages active dry yeast
-6 ½ cups all-purpose flour
-1 tsp salt
-½ cup melted butter
-½ cup white sugar
-2 eggs
Directions
- Dissolve yeast in water for 5-10 minutes (until foamy)
- Add 2 cups flour ½ cup sugar and salt. Beat with mixer 2 minutes.
- Add butter and eggs, beat 2 minutes.
- Slowly add 4 ½ cups flour and mix well. Cover with plastic wrap and place in warm place to rise for 60-90 minutes, or until doubled. I use my oven with just the light on. NO HEAT.
- Punch down and place on floured surface. Shape with hands into a rectangle about 1 inch thick. Cut into 3 strips 2 inches wide and cut each strip into 2 inch squares.
- Place on baking sheet lined with silpat or parchment paper. You want the rolls to barely touch each other on all sides. Place back in warm place to rise 30 minutes.
- Once rolls are risen, preheat oven to 350 F. Place rolls in hot oven and bake 10-15 minutes or until golden brown.
- When done, brush tops with melted butter and serve.
To freeze: remove from oven and allow to cool completely. Decide how many rolls will fit into a gallon size freezer bag (this varies by size of rolls). Get 2 pieces of tin foil, put cooled rolls onto one piece and use other piece to cover and seal. Place rolls in foil pouch into a gallon size freezer bag. Freeze for up to 6 months.
To Prepare: remove from freezer 8 hours prior to serving time, allow to set out on countertop to thaw. Unpackage rolls and place on baking sheet. Bake for 3-5 minutes in a 350 F pre-heated oven. Butter tops and serve hot! You can also warm the rolls in a microwave safe basket (they will be softer) butter tops and serve.
