Low Carb Personal Pizza

Hey friend! I have to share this with you! I’ve been trying to eat low carb the last few months, but if you know me, you know I love pizza. Like, not just love but LOVE, I mean we dedicated every Friday to pizza. So, that had to change because pizza isn’t low carb, and the toppings in excess aren’t low calorie. So, I had to come up with an alternative.

I do love the cauliflower crust pizzas, but they are still relatively high in carbs. Here is my go to low carb pizza.

The cast. Let’s talk abut ingredients. One of the main things I’ve tried to change is the toppings. Here’s what I changed up. 1. I use turkey Italian sausage, this cuts down a lot of calories from standard sausage and turkey pepperoni as opposed to regular pepperoni. 2. Light cheese instead of full fat cheese. If you like ham on your pizza thats a great lower fat alternative. I also add mushrooms and onion to boost the flavor and make the pizza more filling. RAO has a great low carb pizza sauce, I just used what I had here, and I only use about 1-2 TBSP because I don’t like my pizza saucy or soggy. Last tip, I love to add Italian seasoning over my cheese. It just gives a little extra flavor to the pizza.

The good stuff!

Start with you plain tortilla and add some sauce ( I like mine sauce light). Next add some cooked sausage and pepperoni, mushrooms, onion (or any topping you like) and top with shredded mozzarella. Sprinkle on some Italian seasoning. Next, I like to add a little more sausage and pepperoni and more cheese and seasoning. If you like the mozzarella cheese balls you can add them on the very top. It’s time to bake your perfection.

Throw in a 375 degree oven for 8-10 minutes or until the cheese is melted. Once you gooey pizza is done, remove from oven and let sit for about 5 minutes. cut in fourths and eat up.
