OUR FAVORITE CHILI RECIPE
Do you love chili? I have loved chili since I was a little kid. When I was a child, every year on Christmas Eve, we would have a family get together at my house. My mom would host, her two sisters and their families came as well as my Granny and Grandpa. This was when we would exchange gifts with my Granny and it was my favorite night of the year. Granny always made sloppy joes and chili and it was always so good.
As most of you know, I learned all of my kitchen skills from my Granny, and it’s no surprise that I also learned how to make her chili. And her style of chili has always been my favorite. Not too thick, meaty, not too many beans, no whole tomatoes….just perfect chili.
Her method started with green peppers and onion, hamburger, beans, tomato juice, diced tomatoes and when she felt like it, pasta. My kids love pasta in their chili. I’m kind of over that. So I have perfected my granny look-a-like chili, done my way that is fast and easy and delicious! Are you ready for it?
My cast of characters for the perfect pot of chili. This should include an onion & hamburger which I did not have on hand when I snapped this line up, same for the chili seasoning, I’m all out! Yikes. I usually use McCormacks (not an add) but any works, and I usually end up adding some extra chili powder if needed. Two cans of petite diced tomatoes (make sure you get petite), two cans of pinto beans, drained. Once can of V8, my hubby likes the spicy but I don’t like my chilly hot so I use the original. This is the 12oz can, they come in a six pack and its perfect for one pot of chili.
It’s easy as can be ya’ll. Dice up your onion in a pot and add your hamburger. Fry together until the hamburger is crumbly and no pink remains. Drain grease if needed and add your 48 juice and chili seasoning packet. Stir well to mix in seasoning. Add both cans of tomatoes (with juice) and both cans of beans (drained). Bring to a boil and reduce to simmer for 30 minutes. That’s it, your chili is ready to go! Serve it up with some crackers, cornbread, cheese, sour cream, Fritos, diced onion, & scallions and enjoy!!
Chefs Note: You can substitute the 2 cans of petite diced tomatoes for equal amounts of Rotel, it ramps up the spiciness a little but its still so good!
Chili
1 pound ground beef
1 onion, diced
1 Chili seasoning packet
2 cans Pinto Beans
2 cans Petite Diced Tomatoes
1 12oz can V8 juice
1. Fry hamburger with onion until crumbled and no longer pink, drain grease.
2. Put meat in soup pot (I fry mine in the soup pot) and add the V8 and seasoning packet, stir well to mix.
3. Add both cans tomatoes with juice
4. Add both cans beans, drained.
5. Bring to boil and reduce to simmer for 30 minutes.
6. Serve with onion, scallions, cheese, sour cream, crackers, and/or cornbread.
