SAUSAGE SOUP + MY FAVORITE CORNBREAD
We love easy southern cooking. My Granny was a Queen in the kitchen and she could just whip up something from nothing. I had one of those evenings a few weeks ago. I was digging around for something to make and I had some smoked sausage I needed to use, I made some soup y’all, and it was delicious. I don’t know if you’ve ever made soup like this before, it’s new to me, I’ve never seen it anywhere else, so I’m calling it “Sausage Soup”. It’s a thick and yummy soup, and here’s how I made it.
I put 2 cups of dry pinto beans in a pot with 4 cups water, salt and pepper. I tossed in a diced onion and let that cook up until the beans began to soften. You have to watch this closely as it simmers because the pan will go dry and you’ll burn your beans. I did this on a medium-high heat. When the beans were beginning to soften, I added my smoked sausage cut into rings. I was certain to keep enough water in the pot to cover the beans but not too much because you don’t want it to get watery and too thin. Let it continue to simmer until beans are soft and sausage is done. Don’t let that pan go dry. Serve hot with extra onions, fried potatoes, and cornbread.
For the record, I’m also sharing my favorite way to make cornbread. This is quick and tastes extra yummy! No dry cornbread here ya’ll. My sister in law taught me to melt that butter in the pan and get your pan hot before baking your cornbread. Its genius! I hope you’ll try this method and let me know if you love it as much as I do! My husband thoroughly loved this meal. It’s very similar to ham and beans but different, and I know we will be having it again and again and again.
