CHICKEN & RICE SOUP
Family favorite recipes are a favorite of mine to share here on the blog. This chicken and rice soup is a definite favorite for us, and I’m so excited to share it. I’ve made it so often, and its always warm and filling and a fabulous comfort food.
Ingredients:
1 stalk celery, chopped
2 carrots, peeled and chopped
1 onion, peeled and chopped
2 Tbsp Olive Oil
3 cloves garlic, chopped
3 Tbsp flour
4 cups chicken broth
1/4 tsp Italian seasoning
3/4 cup Jasmine rice, uncooked
1 cup heavy cream
1 # cooked chicken breast, cut in pieces/shredded
Salt & Pepper to taste
In pot, add EVOO, celery, carrot, and onion. Sautee until vegetables are softened, once soft, add garlic and stir, add flour and stir to coat veggies. Add broth and stir well, scrape the bottom of the pan to release any bits off the bottom of the pan. Add seasoning, rice, and heavy cream. Bring to a gentle boil and stir. Reduce to simmer, and allow to simmer until the rice is soft and thickened. As the rice cooks, the broth will be soaked up quickly, so add more liquid as needed to prevent pot from going dry. I stir often to prevent rice from sticking. Add the chicken and allow to cook for another 5 minutes. Serve hot.
Warm your winter evening up with this delicious soup, it works well with left over chicken or with rotisserie chicken from the grocery. It is a proven winner that we go to time and time again, enjoy!
