TATER SOUP
Do you like tater soup? My family loves it, in fact, my daughter requests it quite often. We love to have a family dinner night. Most of children are wrapped up in their own lives, but my youngest daughter, Bethany, she truly loves family time and I’m so thankful for that. This is one of her favorites. I’ve taught her how to make it and she’s a fantastic cook, but she still likes it when momma makes it. So, sorry I can’t make this for all of you, but here’s my recipe and you can give it a try for yourself.
Tater Soup
1 medium onion, diced
2 stalks celery, diced
1-2 Tbsp olive oil
Water
1-2 cups chicken broth
8 medium potatoes (Yukon Gold)
Salt
Pepper
2 Tbsp flour
Crumbled bacon, for garnish
Shredded cheddar Cheese, for garnish
Saute celery and onion in olive oil until soft. Pour 24oz water and 1-2 cups chicken broth into pot with celery and onion and add potatoes, peeled and quartered. Shake in some season salt and pepper (all to taste). Bring to a boil and simmer until potatoes are soft. Use wooden spoon or tool of choice and break potatoes into smaller bits.
Grab a mug and get about 1 cup of hot liquid from the pot. Ass 2 Tbsp flour and stir until flour is incorporated then pour into pot. Stir well. Add 1 cup heavy cream. Allow to simmer 15-20 minutes, serve hot with crumbled bacon and shredded cheddar cheese.
