PUMPKIN PIE FRENCH TOAST

Autumn is upon us, friends! When the weather cools and the leaves begin to fall, do you feel the call to the kitchst enjoy during the fall season is, of course, pumpkin! Pumpkin Spice anything kicks it up a level and makes the dish seem so cozy and warm.

I am sharing this delicious recipe with you today, Pumpkin Pie French Toast. Can you even? This french toast is absolutely delicious and kicks those fall feels right in. This yummy fried toast is perfect when served hot and slathered in pumpkin spice butter and dripping with maple syrup. Don’t forget the scrambled eggs and bacon to round out this amazing meal! PUMPKIN PIE FRENCH TOAST

Toast

4 eggs

2/3 cup milk

½ cup pumpkin puree

1 ½ tsp vanilla extract

1 tsp ground cinnamon

1 tsp pumpkin pie spice

12 slices bread of choice

 

Whipped Pumpkin Butter

½ cup salted butter, room temp

1/3 cup pumpkin puree

3 Tbsp maple syrup or honey

1 tsp vanilla extract

½ tsp cinnamon

½ tsp pumpkin pie spice

 

Instructions:

1.   
 In a large, non-stick skillet over medium
heat, add a small amount of butter or oil

In a flat baking dish (I like
to use a pie plate), whisk together eggs, milk, pumpkin, vanilla, cinnamon, and
pumpkin pie spice.

3.   
When butter is melted or oil is
hot, dip bread into mixture, coating both sides well and place in skillet. Cook
about 2-3 min per side or until golden brown. 
Repeat until all slices of bread are toasted.

Serve hot with whipped pumpkin
spice butter and syrup.

To make pumpkin butter, in a
small bowl, add softened butter and whip with a hand mixer for 2 minutes until
light and fluffy.  Add pumpkin puree,  syrup or honey, vanilla, cinnamon, and pumpkin
pie spice.   Beat for an additional
minute or until well mixed.  Store in air
tight container in the fridge for up to 5 days.
