MISSISSIPPI POT ROAST

I’m sure you’ve heard of this Mississippi Pot Roast. I’ve seen this one floating around the internet for years, but just decided to make it last week. I don’t like the pepperoncini peppers so I figured I wouldn’t like this dish. Was I ever wrong. This is so tasty and delicious! I loved it and it was a hit with my family. And let me tell you a secret, it is so easy! You can’t beat it!

Here’s what you need:

  • 3# beef roast
  • 1 stick butter
  • 1 packet Au Jus
  • 1 packet Ranch seasoning
  • 1 jar pepperoncini peppers

That’s it ya’ll! It is that simple. Dump it all in the crockpot, adding half the juice from the pepper jar and as many of the peppers you desire and turn the crockpot on low for 8 hours. If you are like me, I got a late start so i used a frozen roast and put the pot on high for 5 hours and it was perfect, tender and delicious.

I served this roast with homestyle, hand mashed red potatoes (from my
garden) and Caesar salad. It would also serve well over rice, baked potato or
on buns as a sandwich. I think I’m going to try this with chicken breast, I
think that would be delicious also.
