Holiday Cookies

Today I’m sharing my recipes for Sugar Cookies & Icing, Peanut Butter Cookies, Gingersnaps, and Silo Dupe cookies. I hope you enjoy and that they can become a part of you holiday baking!

First up, Sugar Cookies & Icing. Now, if you have the patience, decorating sugar cookies is so fun and they are so very beautiful. BUT, I am not patient, so my favorite method is white icing and the dunk it method. Simply hold the cookie and put the front side in then pull out and let it drip and flip over onto a parchment lined surface to dry. Perfection. A little sugar sprinkled on top is the perfect finishing touch.

SUGAR COOKIES

1 cup butter, 1 cup sugar, 1 1/2 tsp vanilla, 1 egg, 1 tsp water, 3 cups flour, 1 1/2 tsp baking powder, 1/4 tsp sea salt

Heat oven to 375. Cream butter, sugar, vanilla. Add egg and water. Beat until fluffy 8-10 minutes. Sift together flour, baking powder, and salt. Add dry to wet and mix well. Divide in half and wrap each disc in plastic wrap and chill 1 hour. Roll out chilled dough to about 1/4″ thick and cut with cookie cutters. Place on parchment lined cookie sheet and bake in preheated oven for 6-8 minutes. Let cool for 5 minutes then move to cooling rack to cool completely.

Icing: 2 cup powder sugar, 1 tsp vanilla, 1 Tb melted butter, milk. Combine sugar, vanilla, butter with a whisk or fork. Add milk 1 tsp at a time until you reach desired consistency.. Add food color as needed, I prefer white. I got this recipe from my friend Lori @rustymaplecottage and I love it. It’s my go to recipe.

PEANUT BUTTER COOKIES

Is there anything better than an old fashioned Peanut Butter Cookie? These are my very favorite cookie to eat, and I like mine dipped in hot coffee (even though I don’t like coffee).

3/4 cup peanut butter (creamy), 3/4 cup unsalted butter at room temp, 1 cup sugar, 1 cup brown sugar, 2 eggs, 1 tsp vanilla, 3 cup flour, 1 tsp baking soda, 1/2 tsp salt.

  1. Cream butters
  2. Add sugars and whip until light and fluffy (2-3 minutes)
  3. beat in eggs and vanilla
  4. add dry ingredients
  5. Bake (don’t over bake) 8-10 minutes at 350

GINGERSNAPS WITH VANILLA FROSTING

2 cups sugar, 1 1/2 cups olive oil, 1/4 cup softened butter, 2 large eggs, 1/2 cup molasses, 4 cup flour, 4 tsp baking soda, 2 tsp cinnamon, 1 Tbsp ginger, 1 tsp salt, 1/2 cup sugar for rolling, 3 – 11 ounce bags vanilla candy melts.

  1. In a medium bowl combine sugar, oil, butter, and eggs one at a time. Mix 2 minutes and stir in molasses. In a separate bowl, combine flour, baking soda, cinnamon, ginger, and salt. Gradually add wet ingredients until well mixed.
  2. Put 1/2 c sugar in pie plate. Shape dough into balls and roll in sugar. Bake 9-11 min at 350 and cool completely.
  3. Melt vanilla chips in microwave. Dip half of cookie in chocolate and lay on wax paper to cool completely

SILO COOKIES DUPE

I created this recipe when I came home from Magnolia Silos several years ago. It was such a good cookie and I was craving it so badly I had to do something! This is the result.

2 1/2 cup flour, 1 heaping tsp baking soda, 1/2 tsp sea salt, 8 Tbsp unsalted butter at room temp, 2 cups brown sugar, 2 large eggs, 1 1/2 tsp vanilla, 3/4 cup chocolate chips, 3/4 cup peanut butter chips, 1/2 cup chopped walnuts

  1. Preheat oven to 350
  2. Whisk together dry ingredients
  3. Cream butter and sugar together for 2-3 minutes
  4. Add egg and vanilla and mix well
  5. Decrease speed and add flour 1/2 cup at a time
  6. Add chips and nuts
  7. Use a cookie scoop and place cookies 1″ apart. Bake 10-11 minutes. Cool completely on wire rack.

Bonus:

Buckeyes

1 1/2 cups creamy peanut butter, 1/2 cup soft butter, 1 tsp vanilla, 4 cup powder sugar, 24 oz chocolate candy melts

Beat PB and butter, and vanilla until smooth. Add powder sugar and mix until well incorporated. Use hands to make 1″ balls, place on parchment paper lined cookie sheet, insert toothpick into top and freeze for 30-45 minutes. Melt chocolate and dip frozen balls into chocolate 3/4 way up the ball. Place back on parchment paper to cool until chocolate sets up. Enjoy! (these are my husbands favorite Christmas candy).
