HAPPY THANKSGIVING – Cauliflower Broccoli Salad

I hope you had a wonderful Thanksgiving day! It’s such a wonderful time of the year to eat good food and give thanks for all we have been given. But most importantly, its a time to gather with those we love and hold most precious in our lives and to have sweet fellowship together. Yesterday, we had gathered with our family and on our menu was turkey, gravy, dressing, corn, green beans, mashed potatoes, deviled eggs, cauliflower-broccoli salad, rolls with sea salt butter and honey butter, and for desert, pumpkin and sugar cream pies, banana pudding, and cake with chocolate frosting. It was most definitely a feast! You add in the cheeseball and the charcuterie board of cheeses, summer sausage, crackers, crab dip, and pretzel bread…there really wasn’t room for much else! I hope you had the same on your table and that it was surrounded with love!

I had a lot of questions on my instagram about the foods I prepared. The most asked for recipe was for the Cauliflower Broccoli Salad, so I’ve decided to share a quick recipe with you here today. This salad is prefect for any get together, holiday, or just to have on hand for a few meals through the week.

Cauliflower Broccoli Salad

  • Servings: 8-10
  • Difficulty: easy

Salad
1 head cauliflower, wash and chop to bitesize (discard stem)
1 head broccoli, wash and chop to bitesize (discard stem)
1/2 cup sunflower seeds (more or less to your liking)
1/2 cup dried cranberries (more or less to you liking)
1/2 cup diced bacon, cooked (more or less to your liking)
Dressing
1 cup mayonnaise
2 Tbsp sugar (or sweetener of your choice)
2-3 Tbsp white vinegar
(you can add more or less vinegar as needed to get a dressing consistency)

Put all salad ingredients into a bowl, mix dressing in a separate bowl and pour onto salad. Mix well and chill before serving.
