CHICKEN TOSTADA CASSEROLE
Straight from me to you. This is what happens when I just throw something together. It was amazing, hubby had 2 servings and I’m not sad about it at all.
I used rotisserie chicken to make the meat filling and I built this up like a lasagna. It is so good and was fun to make. The queso is from Costco and it has a little bit of jalapeno and its delicious! I highly recommend this one!
Chicken Tostada Casserole
2 cups rotisserie chicken,
shredded
½ cup salsa
1 Tbsp chicken bouillon
Taco seasoning to taste
1 Cut da Carb sheet or 2 low
carb large tortillas or 6 corn tortilla
4 light laughing cow cheese
1 can fat free refried beans
6 tostada rounds
Fat free cheddar cheese
Pam EVOO spray
6 Corn tortilla
Tajin
Instructions:
In a pot on high, heat shredded
chicken with salsa, bouillon, and taco seasoning. Add a little water and mix well. Bring to a simmer and allow to simmer until
the liquid cooks down.
How to build your casserole.
In the bottom a sprayed dish,
place 1 cut da carb (or your choice of bread). Spread on laughing cow cheese
and them ½ c refried beans.
Next layer – add 6 hard tostada
rounds and top with prepared chicken meat.
Top with fat free shredded cheddar cheese and spritz with PAM EVOO to
aid melting.
Next layer- top with 6 corn
tortillas (street taco size). Spritz with PAM and sprinkle with Tajin
Bake at 375*F for 15 minutes.
To serve top with queso, green
onion and light sour cream.
Serves 8 – 8 points per serving
