    CROCKPOT CHEESY POTATO SOUP

I am a kitchen snob. There, I said it. I read lots of recipes and little bits of different recipes speak to me, and I like to mix and match and smash them all together to come up with something that really sounds good to me. When I read this recipe, I was skeptical. I have tried crockpot potato soups in the past and they just didn’t do anything for me. But this one, it was an easy 9 out of 10 (because old school tater soup will always be the perfect 10). I hope you will take a chance on this soup, I think you will be happy you…

    TATER TOT BREAKFAST CASSEROLE

I love putting a casserole like this together on Christmas Eve to pop in the oven on Christmas morning. Makes meal prep a breeze during a busy time. But, it is good any time and even makes a delicious supper! Whenever you choose to make this yummy meal, its a good one that is sure to please! As you will read in the recipe, this calls for a roll of breakfast sausage. I use Country Pride original but you can definitely mix that up. I’ve used Jimmy Dean and Bob Evans in the past. If you are wishing to make this lower calorie for WW you can sub chicken or…

    HAM & BEAN SOUP

Y’all will have to forgive my lack of photos for this amazing, old time soup; but I promise it will be worth your time and effort to make this classic bowl and belly filler! Here’s what you need: This soup is so easy to put together. You’ll start by rinsing your beans and chopping your onion. In a large soup pot (I like to use my dutch oven) place your uncooked ham steak, onions, beans and enough water to cover. Season to your liking with the seasons I listed above. Put pot on stove and bring to a slow boil, reduce to a medium low heat and put a lid…

CAJUN SHRIMP & CHICKEN ANDOUILLE SAUSAGE PASTA

My hubby truly loves a spicy meal. Jambalaya and Cajun flare hits high on his list of yummy eats. I decided to put together my own Cajun inspired dinner and it did not let us down. It was literal fire, so hot, my mouth was burning for a good hour after dinner. If you have a heat loving spicy person in your life, make this for them, they will be so happy you did. This dish is Jambalaya meets Alfredo….I think. It’s so good! Here’s what you need: I began by cooking the pasta to al dente, then heating up the sausage and peppers in a skillet with EVOO and…

    CHICKEN SAUSAGE BLUEBERRY MUFFINS

My grandson comes to visit every other weekend. The last time he was here, we put this sweet treat together for breakfast prep. He said they were so good and he wants them every time he’s here. I told him that was a stretch because he loves Nana’s biscuits and gravy. Nonetheless, he did love them, the hubby does too. They can stay in the fridge for 4 or 5 days and heat up nicely in the microwave. What you need: Here’s what to do: That’s it y’all! It is that simple. There are lots of ways to lighten these up, but the family loves them just like this. One…

    CHICKEN TOSTADA CASSEROLE

Straight from me to you. This is what happens when I just throw something together. It was amazing, hubby had 2 servings and I’m not sad about it at all. I used rotisserie chicken to make the meat filling and I built this up like a lasagna. It is so good and was fun to make. The queso is from Costco and it has a little bit of jalapeno and its delicious! I highly recommend this one! Let me know if you try this one! Yummy!

    Homemade Hamburger Helper

Comfort food much? When my kids were young, they loved hamburger helper. But with 4 kids and 2 adults to feed, i usually had to make 2 boxes plus meat, well….that got expensive. So I started making it homemade, saved money and it would go a lot further. Most people like to cook their pasta in the hamburger helper, I like to pre-cook mine. If you want to cook it in the skillet you will have to add extra liquid. This homemade hamburger helper is perfect for leftovers, I had mine in my grandsons favorite snoopy bowl. Never gets old.
