PEPPER STEAK

Do you love a good Asian inspired meal? When we go to our local Main Moon Chinese Restaurant one of my favorite meals to order is the Pepper Steak. Tender steak with onions, green pepper, and rich brown sauce served over warm rice, that is delicious! Here is my own version that can be made quick and easy and for a lot less calories.

I started with a green bell pepper from my garden and a medium onion, I chose a sweet onion. I sliced them up and sauteed them in a skillet with a bit of EVOO spray and some water. I spray my pan with the EVOO and heat the skillet, then I add the veggies. As they begin to cook I add some water, maybe 1/4 cup and put the lid on so the veggies can steam. When the liquid is gone and the veggies are soft, I scoot them to the side of the skillet and spray the open area with EVOO and add the meat. I used Monreal steak seasoning on the meat and cooked until no longer pink. I used a package of shaved steak from Trader Joes, this stuff is so good and works in a lot of different meals. For this recipe, since I’m cooking for 2, I used half the package and saved the rest for another meal.

Once the meat is done I mix with the veggies. I added some coconut aminos, maybe 2-3 Tbsp. , 1 Tbsp minced garlic, and about 1/4 cup of Heinz beef gravy (from the jar). I mixed well and allowed to simmer for just a couple of minutes. I serve over cilantro lime rice (which I get at Costco). Enjoy ya’ll!
