LIGHTEN UP YOUR BLT SANDWICH WITH WW

One of my favorite memories as a child was my Granny frying up a mess of bacon, slicing some fresh, garden tomatoes and tearing off some crisp leaves of garden lettuce to make a delicious BLT sandwich. It’s a classic, and delicious on every level!

My garden has been giving tomatoes like candy at a parade this summer, and I can’t say that I’m sad about it. All the Celebrity and Roma’s are in the freezer waiting for me to have time to make pasta sauce and tomato juice, but the Beefsteak tomatoes are an “eat now if you can” sort and I’m not letting them go to waste. I was craving a big old BLT and I wasn’t in the mood for cutting corners. I wanted nostalgia and a taste of the past…and that’s what I got!

When we harvested a half bushel basket of Beefsteak tomatoes, I made it my mission to get to the grocery to get the goods for some BLT sandwiches for Sunday supper. I grabbed thick Texas Toast bread and a package Oscar Meyer center cut bacon, I had the rest of the things I needed at home!

I preheated my over to 400 and put the entire package of bacon on a sheet pan, baked for 15- 20 minutes until it reached desired crispiness. 4 slices of center cut bacon is 4 WW points, you can use Al Fresco chicken bacon as an alternative, 4 slices for 2 WW points.

While the bacon was frying in the oven, I prepared the bread! You have to have some delicious pan toasted bread for this sandwich! Don’t you dare cheat and use the toaster, its not the same. For a standard BLT, you will lightly butter both sides of you bread and toast in a hot skillet until beautifully browned. 1 Tbsp butter is 6 WW points, you can use I can’t believe it’s not butter spray instead for 0 points! That amazing Texas Toast bread will cost you 6 WW points for 2 slices, you can use Sarah Lee 45 White bread, 2 slices for 2 WW points.

Tomates and lettuce are zero point foods on WW, so you can load your sandwich with as much of each as you like! Yum!!

Once your bread is ready and your bacon has been dried of grease on some paper towel, it’s time to assemble this bad boy! Grab yourself some mayonnaise and put 1 tsp on the inner side of each piece of bread. Regular mayo will be 2 points for 2 teaspoons. Light mayo is 1 point for 2 tsp.

Load on the tomato and lettuce, then add 4 slices of you crispy bacon and enjoy!

To wrap things up, a regular BLT is going to run you about 18 WW points, ya’ll, I only get 23 points in a day! So that just isn’t a wise choice. The lightened up version will be 5 WW points, much more doable on the program. This is what I love about WW, you make a few doable changes and you have a much more manageable meal! I hope this inspires you to try to lighten up your favorite foods, you can do it friends, even if you aren’t on WW!! Just keep going!
