SPICY BUFFALO CHICKEN SANDWICH

This may be the tastiest chicken sandwich i’ve ever made. It is a little bit higher in points that I like to spend on a sandwich, but it was so good and really hit the spot. I’ve seen the “fake out” McChicken sandwiches all over the internet, but I wanted to put a little twist on it. My hubby is a fan of all things spicy so I decided to make a “spicy” buffalo chicken sandwich, and it did not disapoint!

Here’s what you’ll need: ground chicken, panko crumbs, plain bread crumbs, Shake n’ Bake Buffalo, egg, mustard, salt, pepper, onion powder and garlic powder. I mixed all the measured ingredients, except the shake n bake, and made 2 patties. I then breaded the patties with the shake n’ bake. I lined my air fryer with parchment paper and air fried for 15 minutes at 385. So simple and so good.

While the patties were frying, I made some buffalo mayo which is just what it sounds like, light mayo and buffalo sauce mixed together. The last thing, is the toasted bun! I used keto buns and sprayed them with butter spray and toasted in a skillet. I put the mayo on both buns and then added some extra buffalo sauce for taste to my husbands sandwich.

I am not a fan of too spicy, so I just used plain mayo on my sandwich and it wasn’t really spicy at all. Hubby approves, the said it was delish! One sandwhich is 7 WW points!

Spicy Buffalo Chicken Sandwich


Ingredients:
8 ounces lean ground chicken
1 egg
4 Tbsp Panko
4 Tbsp plain bread crumbs
2 tsp mustard
Salt/pepper/onion powder/garlic powder
¼ pkt Shake n’ Bake Buffalo

Buffalo Mayo:
2 Tb light mayo
2 tsp buffalo sauce
Blend together in small bowl. Spread on inside of top and bottom bun.

Toasted Bun:
1 Keto bun, spray inside and outside of both top and bottom bun with I Can’t Believe It’s Not Butter spray. Place in a hot skillet and toast both sides, about 2 minutes per side.

Instructions:
Mix everything except the Shake n Bake in a bowl and blend well. Shape into two patties. Dredge the patties in the Shake n’ Bake to coat.
Line air fryer with parchment paper and spray with PAM, add both patties and spray tops with PAM. Air fry on 385 for 15 minutes, turn half way through.

Serve on toasted bun with Buffalo mayo and extra buffalo for taste.
