EASY ITALIAN CHICKEN

I’m not really sure if there is anything that could be easier than this. A crockpot chicken dinner that will keep even the pickiest of eaters satisfied. The idea is simple, put your chicken, spices and sauce in the crockpot and leave it for 4-6 hours then come back and enjoy an Italian chicken sandwich for dinner.

Here’s what you need:

  • Crockpot
  • 2 Boneless/skinless chicken breasts
  • 1 jar pasta sauce of choice
  • seasoning (salt, pepper, Italian seasoning)

What you need for serving:

  • Buns or bread of choice
  • Salad kit
  • Parmesan cheese
  • Mozarella cheese
  • Garlic Salt

Here’s what you do:

  • Step 1 – place chicken breasts, seasoning and sauce in crockpot and cook 4 hours on high or 6 hours on low. I like to give the pot a little spray with non-stick cooking spray before I start.
  • Step 2 – When meat has about 20 minutes left to go, toast your bread in a 400* F oven. If I have garlic and butter on hand I will mix my own garlic butter and spread on the bread then bake 5-10 minutes until browned. If I don’t have that, I will butter the bread and sprinkle with garlic powder and some salt or garlic salt then bake.
  • Step 3 – prepare your salad kit while the bread is browning.
  • Step 4 – Shred your chicken and mix the sauce and juices in.
  • Step 5 – When the bread is done, pile on some of the Italian chicken and cover with shredded mozzarella return to oven for a couple of minutes to melt. If using fat free cheese, give a little spritz of olive oil to help with melting.
  • Step 6 – When the cheese is melted, sprinkle with some parmesan cheese if you wish, plate up with sandwiches and salad and enjoy.

ITALIAN CHICKEN SANDWICHES

2 Boneless/skinless chicken
breasts

1 Jar pasta sauce (my fave is
Ragu Traditional)

 

Salt, pepper, Italian seasoning
to taste

EVOO spray

Shredded mozzarella cheese

Buns

Butter

Garlic  (fresh/powder/salt)
