CHICKEN SAUSAGE BLUEBERRY MUFFINS
My grandson comes to visit every other weekend. The last time he was here, we put this sweet treat together for breakfast prep. He said they were so good and he wants them every time he’s here. I told him that was a stretch because he loves Nana’s biscuits and gravy. Nonetheless, he did love them, the hubby does too. They can stay in the fridge for 4 or 5 days and heat up nicely in the microwave.
What you need:
- 1 box blueberry muffin mix (I use Krusteaz Gluten free)
- 1 package sausage links (I use the Amylu chicken sausage)
- mini muffin tin
Here’s what to do:
- prepare the muffin mix by mixing in egg, oil/water as directed on package.
- Put about 1 Tbsp mixture into each mini muffin tin.
- Slice each sausage link into 3 pieces and press one into the center of each mini muffin
- Bake per package directions.
That’s it y’all! It is that simple. There are lots of ways to lighten these up, but the family loves them just like this. One mini muffin is roughly 4 points on WW.
