TATER TOT BREAKFAST CASSEROLE

I love putting a casserole like this together on Christmas Eve to pop in the oven on Christmas morning. Makes meal prep a breeze during a busy time. But, it is good any time and even makes a delicious supper! Whenever you choose to make this yummy meal, its a good one that is sure to please!

As you will read in the recipe, this calls for a roll of breakfast sausage. I use Country Pride original but you can definitely mix that up. I’ve used Jimmy Dean and Bob Evans in the past. If you are wishing to make this lower calorie for WW you can sub chicken or turkey sausage in place of pork. I have also used the pre-cooked sausage crumbles in this dish as well for ease and time saving around the holidays.

This dish is very versatile and you can spruce it up however you see fit. My hubby likes mushrooms in it as well, and it goes great with some white Sawmill Gravy on top. The possibilities are endless, let your imagination run with it!

Sawmill Gravy- if you choose to make some sawmill gravy, keep your sausage grease when draining the meat to make the gravy. You will need about 4 Tb grease, if you don’t have enough, add some butter.

TATER TOT BREAKFAST CASSEROLE

1 pound rolled breakfast
sausage (I use Country Pride original, but hot is good too)

1 medium white onion, diced

1 red bell pepper, diced

1 tsp diced garlic

8 large eggs

2 cups milk

1 tsp garlic powder

½ tsp kosher salt

½ tsp pepper

1 ½ cups shredded cheese of
choice (I use a Mexican blend)

1 – 28oz bag frozen tater tots

 

Instructions:

1.   
 Preheat oven to 350 F.  Prepare casserole dish with non-stick cooking
spray.

2.   
In skillet, cook sausage, red
pepper, and onion on medium heat until vegetables are soft and meat is cooked
through.  Add garlic and allow to warm
(just until fragrant).  Drain grease and spread
into casserole dish.

3.   
In a bowl, whisk together eggs,
milk, garlic powder, salt, and pepper. 
Pour the mixture over the sausage.

4.   
Sprinkle half the bag of cheese
onto meat mixture then top with tater tots lined up in rows.

5.   
Cover with foil and bake for 45
minutes.  Carefully remove foil and
sprinkle remaining cheese over tater tots. 
Return to over, uncovered for an additional 15 minutes.

6.   
Remove when eggs are done and
cheese is melted.

7.   
Let stand for 10 minutes before
serving.

If you want to make this WW
friendly, swap out the sausage for chicken or turkey sausage.  Bagged, cooked sausage crumbles work well
too.

SAWMILL GRAVY

4 Tb sausage or bacon grease

¼ cup all purpose flour

1 ¾ cup milk

½ tsp salt

½-1 tsp fresh cracked black
pepper

 

Instructions:

1.   
 Melt grease on medium heat.

2.   
When melted, add flour and stir
into grease creating a rue.  Allow to
cook for about 1 minute while stirring around.

3.   
Add milk or cream and whisk
until thickened.

4.   
Season to taste with salt and
pepper.
