    EGG SALAD

Do you like egg salad? I think it is a much overlooked delicacy. I’ve had a lot of folks let me know that I make some good egg salad, and today, I’m sharing that goodness with you. It really is fresh, delicious and easy to make and the best part, most of these items are probably in your kitchen as we speak. What do you need to make egg salad? The list isn’t long, you’ll need -boiled eggs -light mayonnaise (I prefer Hellman’s or Duke) -dijon or yellow mustard (the choice is up to you, I tend to lean towards yellow) -dill -salt & pepper That’s it! If you have…

FAVE AMAZON FINDS FOR MY WW JOURNEY

    2. FOOD SCALE – A food scale makes life 100 times easier when on a weight loss journey. Why is that you ask? Because all food labels give servings in quantity such as piece/cup AND in grams as well. Often, if you check the weight, you can have more of the product. Example: chicken nuggets, the label may say serving size 6 nuggets or 80 grams. When you actually weigh the product, 6 nuggets may only be 72 grams so you can add an extra nugget. Things are always more precise with weight measurements. 3. CHEESE (VEGGIE) GRATER/SHREDDER – This device is an all time favorite of mine and I…

    TAMMY KATE’S WW PANTRY ESSENTIALS

I get asked often how I keep my meals exciting and my snacks nutritious and still manage to remain within my points allotment. Here’s the answer, I keep lots of “good” stuff on hand. Now, part of the diet culture is to mark some foods good and some bad, that’s not what I’m doing here. By good, I mean foods that are within my point value range and easy to obtain or repair. So let’s have a look at some items I strive to keep stocked in my pantry and fridge! There are several wraps out there that are low in points, but Cut Da Carb is one of my…

    FAKE OUT ARBY’S ROAST BEEF

This one was fun and easy! My daughter told me about it and the hubby and I both enjoyed! Making a fake out Arby’s roast beef sandwich is easy! Grab a package of buns, I use Keto Culture, and a package of deli roast beef (if you get it at the deli have them shave it thin). Some additional things you might like to have with your sandwich, just remember to count your WW points; BBQ sauce, horseradish sauce, creamy cheddar cheese, swiss cheese. You can dress that sandwich up however you like. Here’s what you do, bring that deli meat home and put it in a saucepan with 1…

LIGHTEN UP YOUR BLT SANDWICH WITH WW

One of my favorite memories as a child was my Granny frying up a mess of bacon, slicing some fresh, garden tomatoes and tearing off some crisp leaves of garden lettuce to make a delicious BLT sandwich. It’s a classic, and delicious on every level! My garden has been giving tomatoes like candy at a parade this summer, and I can’t say that I’m sad about it. All the Celebrity and Roma’s are in the freezer waiting for me to have time to make pasta sauce and tomato juice, but the Beefsteak tomatoes are an “eat now if you can” sort and I’m not letting them go to waste. I…

    SPICY BUFFALO CHICKEN SANDWICH

This may be the tastiest chicken sandwich i’ve ever made. It is a little bit higher in points that I like to spend on a sandwich, but it was so good and really hit the spot. I’ve seen the “fake out” McChicken sandwiches all over the internet, but I wanted to put a little twist on it. My hubby is a fan of all things spicy so I decided to make a “spicy” buffalo chicken sandwich, and it did not disapoint! Here’s what you’ll need: ground chicken, panko crumbs, plain bread crumbs, Shake n’ Bake Buffalo, egg, mustard, salt, pepper, onion powder and garlic powder. I mixed all the measured…

    CHOCOLATE BANANA MINI MUFFINS

Can we say yum? These little mini muffins are a treat for the sweet tooth and make a wonderful desert. One serving is 1 WW point, that would be one regular size muffin or 3 mini’s! I like to eat mine with some fat free Redi-wip, it sure hits the spot! This is not my recipe, but I’ve lost the name of the creator. The original calls for baking in a regular size tin, I prefer the mini. I did take these little babies and dress them up for the 4th of July holiday! A little redi-wip and a blueberry on top for the blue and a raspberry on top…

    PEPPER STEAK

Do you love a good Asian inspired meal? When we go to our local Main Moon Chinese Restaurant one of my favorite meals to order is the Pepper Steak. Tender steak with onions, green pepper, and rich brown sauce served over warm rice, that is delicious! Here is my own version that can be made quick and easy and for a lot less calories. I started with a green bell pepper from my garden and a medium onion, I chose a sweet onion. I sliced them up and sauteed them in a skillet with a bit of EVOO spray and some water. I spray my pan with the EVOO and…
